Details of Common Kenya Food Recipes

The master of Kenya Food Recipes is ugali, which is also the national dish. In fact it means cornmeal porridge cooked with water to a thick consistency and poured out onto a plate for everyone to serve from.

Over it, beef broth with vegetables can be poured, and there are also special occasions when Kenyan people add chunks of meat to the broth.

So, the main ingredients in preparing ugali are yellow cornmeal, water, salt, and as special equipment, a medium-size saucepan, and a mixing spoon.

Sukuma wiki or collard greens, is an important dish as the African diet is also based on green vegetables. If consists of collard greens, onions, tomatoes, vegetable oil, chili pepper and red pepper, lemon juice, flour, water, and salt.

There is another tasty dish called maharagwe which means spiced red beans in coconut milk, that can be prepared using dried red kidney beans, yellow onions, tomatoes, oil, turmenic, salt, chili peppers, cayenne pepper, and coconut milk .

For mtuza wa samaki or baked curried fish, you need white fish, yellow onions, chili or cayenne pepper, cooking oil, tomatoes or tomato paste, garlic, ground cardamom, cumin, white vinegar, and salt.

Plantains in coconut milk sounds interesting, as well, so it worth spending a part of your time to prepare it, using sliced plantains, curry powder, cinnamon, cloves,coconut milk , and salt.

As for vegetable curry, use onions, cumin seeds, cooking oil, potatoes, cauliflower, green beans, tomato paste, eggplant, mustard seeds, ginger, garlic, coriander, ground cumin, chili peppers or cayenne pepper, cinnamon sticks, cloves, turmenic, green peas, fresh leafy greens, dry chickpeas, and salt
